Our Staycation - Cooking Across the Country!

Summer Vacation is here! We have 63 days to enjoy a little fun in the sun before returning to our classrooms! So, with lots of free time and a limited budget, we are planning to cook our way across the country!

Steamy in South Carolina

South Carolina is our neighbor to the North and enjoys many of the same southern foods as we do in Georgia.  They love shrimp and grits, biscuits and gravy, sweet tea, country ham, fried okra, etc.  Here are a few fun facts:   South Carolina entered the union in 1788 and became the 8th state.  The first battle of the Civil War took place at Fort Sumter.  It only has one remaining covered bridge and has it's own state dance...the Shag!

South Carolina is the nation's leading peach producer and shipper east of the Mississippi River - I would have missed that question on Jeopardy!  It is also home to the Peach Capital of the World! So remind me again why Georgia is known as being the Peach State?  I am guessing it is because South Carolina chose to be known as the Palmetto State.

Low Country Boil:
(We made enough for 14 people so you will want to check your portions)

6 pounds of shrimp
6 pounds of baby red potatoes
14 ears of corn
4 onions
5 lemons - cut in half
6 pounds of sausage - sliced on the bias
low boil seasoning packet


First, bring the water to a boil.

Drop in the seasoning mix,


Lemons and onions - allow them to boil for a few minutes.

Put the potatoes in and cook for 20 minutes.

Add in the sausage, cook for 10 minutes.

Add in the corn, cook for 10 minutes,

At the end, add in the shrimp - cook until pink - two minutes tops!

Drain and place on a platter (or two).  Serve with coleslaw and rolls.  What a delicious one pot meal!
 
We were celebrating my Mother-In-Love's 65th birthday so I was a bit distracted to get great pictures...the nice thing is, we all know how to do a low boil!
