Happily Ever Albright: Sightseeing in St. Louis (Missourri)

On the road again and heading north. Missouri not a place we have ever visited; however, we do have a great interest there! Our hometown hero, Adam Wainwright, pitches for the St. Louis Cardinals. I think he is on our television almost as often as the Braves! One of Chad's former students and football players, Alan Bailey, is a defensive lineman for the Kansas City Chiefs. Coastal Georgia is well represented in the Show Me State!

While Missouri is known for it's sports teams and SEC membership, it is also prides itself on it's food and beverage contributions. Barbeque is top on the list...but did you know iced tea originated in Missouri? I'm guessing they saved sweet tea for the south, but it is a first! Today we are going to make a St. Louis specialty...let's get cooking!

Fried Cheese Ravioli:

1/4 cup milk

1 egg

3/4 cup Italian seasoned bread

1/2 teaspoon salt (optional)

1 package frozen cheese ravioli, thawed

3 cups vegetable oil for frying

3 tablespoon grated Parmesan cheese

1 jar spaghetti sauce

Defrost ravioli using a paper plate for 15-20 minutes.

Crack and egg into a small bowl.

Whisk well.

Add milk and whisk again.

Place breadcrumbs in a separate bowl, and if desired, salt.

Add 2 tablespoons of the Parmesan cheese.

Using a fork, break up any lumps and combine.

Put all three plates/bowls together for easy coating.

Dip ravioli in milk mixture,

Coat with breadcrumbs.

In a microwave proof dish, heat marinara sauce.

Using a large, heavy pan, pour oil to depth of 2 inches. Heat oil over medium heat until ready. Fry ravioli, a few at a time, 1-2 minutes per side or until golden.
