Our Staycation - Cooking Across the Country!

Summer Vacation is here! We have 63 days to enjoy a little fun in the sun before returning to our classrooms! So, with lots of free time and a limited budget, we are planning to cook our way across the country!

Nibbling in New Hampshire

New Hampshire is a state with lots of history since it was one of the original thirteenth colonies.  Here are a few notable firsts for New Hampshire:  first American to travel into space, first free public library, first legal lottery, and first women's strike.  It also was the place the alarm clock was invented and has the longest wooden bridge in the USA.

What you might not know about New Hampshire is that forests cover more than 80 percent of it.  It is only 168 miles long and 90 miles across at its widest point.  My favorite slogan I found was New Hampshire:  Don't Take it for Granite...love the play on words - it is known for being the Granite State!  Since most of our dishes this Staycation have centered around breakfast, lunch, and dinner, it only seems right to have a post dedicated to desserts.  Here are two that go together well...

Maple Milkshakes:

2/3 cup low-fat milk 
2 cups butter pecan light ice cream
2 tablespoons maple syrup
1 teaspoon almond extract


Pour milk into a blender.

Add ice cream,

Maple syrup and almond extract.

Blend for 1 minute, until smooth.  Pour into glasses and serve with straws.



Apple Crisp:

8 apples- 5 Washington, 3 Cortland
2/3 cup sugar
1 cup flour
1 cup dark brown sugar
2 teaspoons cinnamon
3/4 stick butter

Peel apples.

Slice apples.

Place in a 12 inch pie plate.  (I made 2 crisps out of the recipe)

Sprinkle with granulated sugar..

Toss well.

In another bowl, add flour and brown sugar.

Sprinkle in cinnamon,

Butter,

Mix until crumbly.  Add to the top of the apples.

Bake in a 350 degree oven for an hour.

Take out and let rest 15 minutes before serving.

If desired, serve with a scoop of your favorite ice cream.
