Summer Vacation is here! We have 63 days to enjoy a little fun in the sun before returning to our classrooms! So, with lots of free time and a limited budget, we are planning to cook our way across the country!

Navigating Through Nebraska

Nebraska is our next state to visit on our Staycation, we have made it over half of them!  Nebraska is famous for being the Cornhusker State; however, did you know it is also known as the Bug-eating State?  Seriously, it is a reference to the many bull bats that eat the state's various insects.  I wonder if they would eat gnats?  Another nickname Nebraska holds is the Beef State...it's not surprising that Omaha Steaks is one of it's top distributors.
A few other facts about Nebraska before we get cooking:
- Kool-Aid, Rueben's and SPAM originated there
- Nebraska has the largest aquifer in the USA and has more miles of river than any other state
- It has the largest indoor rainforest in the world

Onion Lovers Grilled Steak Kabobs:


2 Top Sirloin Steaks
4 green onions, cut into 2-inch pieces
1/2 red onion
1/2 yellow onion
2 teaspoon salt

Cut steaks into 1 inch pieces.

Season with salt and steak seasoning.

Cut green onions into 2 inch strips.

Chop red onion into slices.

Chop yellow onion into slices.

Using a wooden (or metal) skewer, slide on a green onion.

Next, add the red onion,

Then, the yellow onion.

Now add the meat.

Continue the pattern - green, red, white, steak - until the skewer is full.
 
Grill over direct heat for 3 minutes per side,
 
Be sure to get grill marks on each side.
 
These can be served as an appetizer or the main dish!
 
 
Oven Baked Corn In The Husk:

Preheat oven to 425 degrees.

Place corn directly on the bottom rack of the oven.

Bake for 30 minutes. Take out and let rest for a few minutes.

Grab a cooked ear of corn and a knife.  Cut off the bottom.

Just about an inch.

Now stand the ear of corn on the flat bottom.  Hold it from the top and squeeze until the corn comes out.
 
Look mom...no silk to peel!
 
Add butter and salt and dinner is ready!
