On Our Way to Oregon!

Our Staycation is over half way finished and that means Summer is coming to an end!  We have learned so much about the state of Oregon.  It is nicknamed the Beaver State and has more ghost towns than other state.  It was also the first state to have one-way streets.  Oregon is also the state that has the most photographed lighthouse in the USA.  I think my favorite was the fact it is one of two states that do not have any self-serve gas stations...this might just make a girl happy!

Oregon shares its birthday with Valentine's Day and is home to the largest log cabin in the world...I can only imagine how many people could live there! Oregon is the only state with an official state nut.  Can you guess?  It's the hazelnut!  Oregon is the birthplace of the Nike "swoosh" logo and provides the University of Orgeon with a variety of football uniforms every year.

Wild Summer Greens with Oregon Blueberries and Blueberry Dressing:                                         

Blueberry Dressing:

1 cup blueberries
2/3 cup oil
1/3 cup balsamic vinegar
2 Tablespoons water
2 Tablespoons honey
1/4 teaspoon salt

Pour the blueberries into the blender,

Add the oil,

Balsamic Vinegar,

Water and honey,

Salt,

Blend until smooth.

Pour into a serving bowl (I used a pitcher),

Refrigerate until ready to serve.


Wild Summer Greens Salad:

1/2 cup blue cheese crumbles
1 bag sliced almonds
1 small red onion - sliced thin
1/2 cup blueberries
mixed salad greens of your choice

In a salad bowl, add mixed greens,

Red onion,

Bue cheese,

Sliced almonds,

and blueberries.  Serve with premade dressing and enjoy!  This is a light and refreshing salad - sorry, I ate it before I could get a picture...I was hungry!!!
